Description

These Apple Cinnamon Blondies bring a delightful balance of flavors—richness from butter, warmth from cinnamon, and sweet, soft apples make them irresistibly tasty. Perfect for a comforting snack or dessert!


Ingredients

  • 1 cup peeled, cored, and chopped apples (½” pieces)
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon dark brown sugar
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ cup unsalted butter, melted
  • ¾ cups dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoons milk

Instructions

  1. In a frying pan over medium heat, combine the chopped apples, dark brown sugar, and cinnamon. Cook, stirring occasionally, for about 5 minutes until the apples soften, then transfer to a plate to cool.
  2. Preheat your oven to 350°F. Grease and parchment-line an 8×8” pan with overhang for easy removal.
  3. In a large mixing bowl, whisk together the flour, baking powder, kosher salt, ground cinnamon, and nutmeg.
  4. In another bowl, whisk together the melted butter, packed dark brown sugar, egg, and vanilla extract until smooth.
  5. Combine the wet and dry ingredients, folding with a rubber spatula until just combined. Gently fold in the cooled apples and their juices.
  6. Spread the batter evenly in the prepared pan and bake for 18-22 minutes, or until the top is lightly golden. Be careful not to overbake!
  7. Allow to cool completely on a wire rack before icing.

Notes

For extra flavor, add a tablespoon of chopped nuts to the batter before baking.
These blondies can be stored in an airtight container for up to a week.
The blondies can also be served warm with a scoop of vanilla ice cream for a decadent dessert.
