  • 1 cup (198g) granulated sugar
  • 1 cup (213g) brown sugar
  • ¾ cup (149g) vegetable oil
  • 1 cup (255g) applesauce, sweetened or unsweetened
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 ½3 cups diced apples, cut into ¼-inch chunks
  • ½ cup (107g) brown sugar
  • ¼ cup (57g) unsalted butter
  • 2 tbsp milk
  • ⅔ cup (76g) powdered sugar, sifted

Instructions

  1. Preheat the oven to 350°F. Grease and flour a bundt pan thoroughly.
  2. Peel, core, and dice apples into ¼-inch chunks, needing about 2.5-3 cups.
  3. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg, then set aside.
  4. In a separate bowl, mix granulated sugar, brown sugar, vegetable oil, applesauce, eggs, and vanilla until combined.
  5. Gradually add half of the dry mix to the wet mixture, stirring gently.
  6. Incorporate the remaining dry mix and diced apples, mixing until just combined.
  7. Pour the batter into the bundt pan and smooth the top with a spatula.
  8. Bake for about 60 minutes, checking for over-browning and covering with foil if necessary. Bake a total of 70-80 minutes.
  9. Cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.

Notes

Ensure to grease and flour the bundt pan well to prevent sticking.
Use a toothpick to check for baking doneness; it should come out clean from the center.
