- ¼ cup greek salad dressing
- 1 1/2 teaspoons greek seasoning blend
- ½ lemon juice of

Instructions
- Chop the potatoes into halves, quartering any extra large ones, and place them in a large bowl.
- Cover the potatoes with cold water and soak for 30 minutes.
- Drain the water from the potatoes and rinse with fresh water.
- Thoroughly dry the potatoes and transfer to a mixing bowl. Add the salad dressing and seasoning, tossing to coat well.
- Spray the air fryer basket with non-stick spray and arrange the potatoes inside. Air fry at 400°F for 20 minutes, shaking the basket every 5 minutes for even cooking.
- Taste the potatoes and add additional Greek seasoning if desired. Sprinkle fresh parsley on top and squeeze lemon juice over before serving.
