Description

Enjoy Air Fryer Greek Roasted Potatoes that are bursting with flavor. This easy recipe combines baby yukon gold potatoes, Greek dressing, and zesty seasonings, perfect for a lively dinner or comforting side dish.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes into halves, quartering any extra large ones, and place them in a large bowl.
  2. Cover the potatoes with cold water and soak for 30 minutes.
  3. Drain the water from the potatoes and rinse with fresh water.
  4. Thoroughly dry the potatoes and transfer to a mixing bowl. Add the salad dressing and seasoning, tossing to coat well.
  5. Spray the air fryer basket with non-stick spray and arrange the potatoes inside. Air fry at 400°F for 20 minutes, shaking the basket every 5 minutes for even cooking.
  6. Taste the potatoes and add additional Greek seasoning if desired. Sprinkle fresh parsley on top and squeeze lemon juice over before serving.

Soaking the potatoes helps achieve a crispier texture in the air fryer.
