Ingredients
Scale
- 1 cup diced apples
- 3 tablespoons packed brown sugar
- ½ teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1.5 teaspoons baking powder
- ½ teaspoon sea salt
- 1 cup 2% blended cottage cheese
- ¼ cup powdered sugar
- 1 tablespoon almond milk, plain, unsweetened
Instructions
- Preheat the air fryer to 375℉.
- In a bowl, combine the diced apples, brown sugar, and cinnamon, tossing to coat the apple pieces.
- Add the flour, baking powder, and salt to the bowl, stirring well to mix.
- Incorporate the blended cottage cheese, stirring with a wooden spoon until dough begins to form. Knead the dough by hand as needed.
- Lightly flour a work surface and divide the dough into 4 pieces.
- Flatten each piece into a round shape resembling a fritter on parchment paper.
- Arrange 2 fritters in the air fryer and cook at 375℉ for 4 minutes. Flip and cook for an additional 4 minutes until golden brown; repeat with remaining fritters.
- Meanwhile, whisk together the powdered sugar and almond milk in a bowl to prepare the glaze.
- Once fritters are cooked, dip them in the glaze and transfer them to a wire cooling rack.
- Let the glaze set for a few minutes before serving.
Notes
For extra flavor, consider adding chopped walnuts or raisins to the batter.
Make sure the fritters are not overcrowded in the air fryer for even cooking.
Store any leftovers in an airtight container at room temperature for up to two days.
