- 1/4 cup (60 ml) whipping cream or heavy cream
- 4 ounces (112 grams) full-fat cream cheese
- 1/3 cup (56 grams) white chocolate chopped and melted
- 1/2 cup (120 grams) plain greek yogurt
- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- Beat the whipping cream in a small bowl until stiff peaks form, being careful to avoid over-mixing.
- In a medium bowl, combine the cream cheese and melted white chocolate using the same beaters. Mix until smooth, then add the Greek yogurt and blend thoroughly before incorporating the mashed raspberries.
- Gently fold in all but one tablespoon of the whipped cream to keep the mousse light. Transfer the mixture into two serving glasses. You can serve immediately or chill for up to eight hours.
- Before serving, top each mousse with the reserved whipped cream and garnish with fresh raspberries if desired.
Notes
For a sweeter mousse, adjust the amount of melted white chocolate to your taste.
This dessert can be made a few hours in advance, allowing the flavors to meld beautifully.
