These Valentine’s Day Decadent Gingerbread Latte Mousse Domes blend rich flavors of espresso and spices with a luscious mousse, making for a delightful treat that’s simple to prepare. Ideal for impressing guests or enjoying at home!

- 1 cup espresso
- 1/2 cup brown sugar
- 1 cup white chocolate
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon gelatin
- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg
- 2 teaspoons ginger
Instructions
- Bloom the gelatin in a small bowl of cold water. In a saucepan, combine warm espresso with brown sugar and stir until dissolved. Add white chocolate, cinnamon, cloves, and nutmeg, stir until smooth, then cool slightly.
- In a mixing bowl, combine mascarpone and heavy cream. Beat until soft peaks form, about 2-3 minutes. Fold cooled mousse base into the whipped cream until combined and fluffy.
- In a separate bowl, whisk flour, ground ginger, and a pinch of salt. Stir in molasses and egg yolk until a soft dough forms. Roll out to 1/4-inch thick and cut out circles for the cookie base.
- Grease silicone dome molds and fill with mousse mixture, leaving space at the top. Insert cookie rounds into the mousse until just submerged. Cover with plastic wrap and freeze overnight.
- Once frozen, heat glazing ingredients until warm (about 90°F). Remove mousse domes from molds and place on a wire rack over a baking sheet. Pour warm glaze over the domes evenly.
- Transfer glazed domes to a serving plate. Optionally, decorate with cocoa powder or mini gingerbread cookies.
Notes
Ensure the gelatin is fully bloomed before mixing it into the mousse.
Use high-quality white chocolate for the best texture and flavor in the mousse.
