Ingredients
Scale
- ½ cup granola, more for topping
- 1 cup yogurt of choice
- ½ cup fresh strawberries, hulled and diced
- ¾ cup fresh strawberries, sliced or chopped
- ¼ cup granola, smaller pieces work better
Instructions
- Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each cup.
- In a medium bowl, combine yogurt and diced strawberries. Use a pastry cutter or fork to mash the fruits into the yogurt until mostly mixed in, with some chunks remaining. Stir and fold until well combined.
- Spoon 2 tablespoons of the strawberry yogurt mixture into each cup to create an even layer, then tap the pan to smooth it out.
- Press about 1 tablespoon of sliced or diced strawberries into the tops of each cup.
- Sprinkle about 1 teaspoon of granola over the strawberries.
- Place the pan in the freezer and chill until firm, about 2-4 hours.
- Once firm, pop out each frozen yogurt bite, thaw for a few minutes, and enjoy.
Notes
For an extra crunch, consider adding nuts or seeds to the granola topping.
These bites can be stored in the freezer for up to a month; just thaw before serving.
Experiment with different yogurt flavors for a unique twist!
