- 1 cup granulated sugar

- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F and grease three 6-inch round cake pans.
- In a stand mixer, combine eggs and granulated sugar, beating until the mixture reaches the ribbon stage.
- Sift in flour, baking powder, and cinnamon, and gently fold into the egg mixture.
- Divide the batter among the prepared pans and bake for 15-18 minutes, checking with a toothpick.
- Cool the cakes in the pans for 10 minutes before transferring them to a wire rack.
- Optionally, wrap cooled cakes in plastic wrap and freeze for at least 4 hours before assembly.
- For the frosting, beat cream cheese, mascarpone, and butter until smooth.
- Gradually add powdered sugar while mixing, then add vanilla and beat until fluffy.
- Brush the top of each cake layer with espresso.
- Assemble the cake by layering frosting between the cooled cake layers, frosting the top and sides as desired.
- Sift cocoa powder over the top.
- Refrigerate the cake for 4 hours before serving.
