Description

This Slow Cooker Reuben Dip is a delightful blend of cream cheese, corned beef, and Swiss cheese, offering exceptional flavor and simple preparation. Ideal for quick dinners and gatherings, this dip is bound to impress your guests!


Ingredients

Scale
  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.
  3. Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!

Notes

For added flavor, consider mixing in some diced pickles or jalapeños.
This dip can be made ahead of time and reheated before serving.
Serve with a variety of breads and veggies to please all tastes.
