Description

This Sausage and Potato Sheet Pan Dinner is a delightful combination of smoky sausage, tender potatoes, and fresh green beans. It’s a quick and easy meal that’s perfect for busy weeknights or any time you crave comfort food.

  • 1 lb smoked sausage beef or pork, sliced into rounds
  • 1 lb baby potatoes halved (or quartered if large)
  • 12 oz fresh green beans trimmed
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • optional: ¼ teaspoon red pepper flakes for heat
  • optional garnish: fresh parsley or grated parmesan

Instructions

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • In a large bowl, combine the halved potatoes, green beans, and sliced sausage. Add olive oil, garlic powder, onion powder, smoked paprika, dried parsley, salt, pepper, and red pepper flakes if desired, and toss everything together until well coated.
  • Spread the mixture evenly across the prepared baking sheet, ensuring everything is laid out in a single layer for even roasting.
  • Bake in the preheated oven for 30–35 minutes, flipping the ingredients halfway through, until the potatoes are golden and tender, while the green beans are slightly crispy.
  • Serve hot, garnished with fresh parsley or a sprinkle of grated Parmesan if you like.

Notes

For added flavor, consider marinating the sausage beforehand in your favorite spices.
