Description

This Quick Ground Beef and Potatoes is a delightful one-pan dinner that combines juicy ground beef, tender potatoes, and melted cheese. Perfect for a fast, flavorful meal, it’s great for busy nights and loved by all.


Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds lean ground beef
  • 2 teaspoons kosher salt, divided
  • 2 cloves garlic, minced
  • 1 medium yellow onion, finely diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 1 ½ pounds yukon gold or russet potatoes, chopped into ½ inch cubes
  • 1 cup water
  • 1 teaspoon yellow mustard
  • 1 tablespoon worcestershire sauce
  • 4 tablespoons ketchup
  • 2 cups sharp cheddar cheese, grated

Instructions

  • Preheat the oven to 375°F if using the oven (optional).
  • In a large heavy-bottom, non-stick skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the onion and ground beef, seasoning with 1 teaspoon salt, garlic, black pepper, and smoked paprika.
  • Break apart the meat as it cooks, about 5-8 minutes, until browned and the onion is soft, stirring occasionally.
  • Remove the cooked meat and set it aside in a bowl. In the same skillet, add another tablespoon of olive oil along with the chopped potatoes and the remaining teaspoon of salt. Cook for 1 minute until fragrant.
  • Add ¼ cup of water, cover, and cook while stirring frequently for about 15-20 minutes, until the potatoes are tender. Add more water if potatoes stick to the pan.
  • Return the cooked meat to the skillet, then stir in mustard, Worcestershire sauce, and ketchup, adding more water if needed.
  • Sprinkle half the cheese over the mixture and stir to combine. Top with the remaining cheese, then place in the oven for 5 minutes or until cheese melts. Serve warm with desired toppings.

Notes

For a quicker option, you can skip the oven step and serve directly from the skillet.
