Description

Pineapple Bacon Jam combines savory bacon, fresh pineapple, and aromatic spices for a unique topping that enhances any dish. This easy recipe is perfect for breakfasts, snacks, or impressing guests with its flavorful profile and simple preparation.

Ingredients

Scale
  • 1 pound thick-cut bacon, diced
  • 1 large yellow onion, finely diced (about 1 ½ cups)
  • 3 cups fresh pineapple, finely diced (about ½ of a medium pineapple)
  • 2 teaspoons garlic, minced
  • ½ cup light brown sugar, packed
  • ¼ cup apple cider vinegar
  • ¼ cup maple syrup
  • 1 teaspoon chili powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes, optional

Instructions

  1. In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels.
  2. Using a slotted spoon, transfer the cooked bacon to the lined plate, leaving about ¼ cup of bacon grease in the skillet.
  3. Reduce the heat to medium-low, then add the diced onion to the skillet, cooking until softened and beginning to caramelize.
  4. Add the finely diced pineapple and stir frequently until it softens and releases juices, about 10 minutes.
  5. Stir in the garlic and cook for about 30 seconds.
  6. Add the brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes. Stir well to combine.
  7. Return the cooked bacon to the skillet, mixing everything together.
  8. Allow the mixture to simmer on low heat for 20 to 30 minutes, stirring occasionally, until it thickens to a jam-like consistency. If too loose, continue cooking until most liquid evaporates. The jam should be thick and glossy.
  9. Let cool slightly before serving. Serve warm or refrigerate and gently reheat before using.

Notes

For a sweeter jam, add an extra tablespoon of maple syrup.
This jam can be stored in an airtight container in the refrigerator for up to two weeks.
Serve on toast, burgers, or use as a glaze for grilled meats.
