- 4 oz full-fat block cream cheese (softened to room temperature)
- 4 tablespoons unsalted butter (softened to room temperature)
- 1 ¼ cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch salt (to taste)
- 1–2 tablespoons heavy cream (or milk, as needed)
Instructions
- Warm the milk to 110-113°F and combine it with yeast and 1 tablespoon of sugar in a bowl. Let it sit for 5 minutes until foamy.
- Mix in honey, remaining sugar, Greek yogurt, eggs, egg yolk, and vanilla using the paddle attachment.
- Incorporate bread flour and salt, mixing on low speed until a shaggy dough forms. Let sit for 10 minutes.
- Knead the dough on medium speed for 5-6 minutes until smooth and elastic, pulling away from the bowl's sides.
- With the mixer on low, gradually add softened butter until fully incorporated, continuing to knead until the dough becomes smooth and slightly tacky.
- Transfer the dough to a greased bowl, cover, and let rise for 45-60 minutes until puffy but not doubled in size.
- Prepare the filling by mixing softened butter, brown sugar, cinnamon, salt, and vanilla into a paste.
- Roll the dough on a floured surface into a 24×18-inch rectangle, spreading the filling evenly over the dough.
- Cut the dough into 12 even strips, then roll tightly into cinnamon rolls in a prepared baking pan.
- Cover and let rise for another 45 minutes to 1 hour, then preheat the oven to 350°F.
- Pour warmed heavy cream around the rolls and bake for 25-30 minutes until golden brown and the internal temperature reaches 185-190°F. Let cool for 10 minutes.
- Beat cream cheese and butter until smooth, add powdered sugar, vanilla, and salt; mix until creamy, adjusting with cream or milk as needed. Spread over warm cinnamon rolls.
