- 1/3 cup coconut oil
- 1 1/4 cup dairy free chocolate chips
- 3 eggs
- 1 cup coconut sugar
- 1 cup almond flour, sifted
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Melt the coconut oil and chocolate chips together in a saucepan over medium heat, stirring frequently until the chocolate is smooth; set aside to cool slightly.
- In a large mixing bowl, whisk together the eggs and coconut sugar for at least 45 seconds to create a crackly top.
- Gently fold in the sifted almond flour and salt using a spatula. It's important not to overmix, so do this by hand.
- Pour in the melted chocolate mixture and stir to combine, ensuring everything is mixed well without overworking the batter.
- Prepare an 8×8 inch baking dish by lining it with parchment paper or greasing it with a nonstick spray, then pour the brownie batter into the dish.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out clean. Allow to cool before slicing and serving.
Notes
For a richer flavor, use high-quality dark chocolate chips.
