Description

This Mexican Street Corn Casserole is a delightful combination of sweet corn, creamy sauces, and spices, making it an ideal dish for quick family dinner or gatherings. With easy prep and mouthwatering flavors, it’s a comfort food favorite that everyone will love.


Ingredients

  • 40 oz Frozen Corn
  • 2/3 cup Mayonnaise
  • 2/3 cup Sour Cream
  • 2 tsp Chili Powder
  • 3/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 6 oz Queso Fresco
  • Dried Cilantro, Chopped

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9 x 13 inch pan with non-stick spray.
  2. In a large bowl, combine frozen corn, mayonnaise, sour cream, 1 1/2 teaspoons of chili powder, garlic powder, salt, and 4 oz of crumbled Queso Fresco.
  3. Transfer the mixture into the prepared pan and spread it evenly.
  4. Sprinkle the remaining 1/2 teaspoon of chili powder on top of the corn mixture. Bake for 35-40 minutes, or until bubbly around the edges.
  5. Remove from the oven and top with the remaining 2 oz of crumbled Queso Fresco and garnish with chopped dried cilantro.

Notes

For a spicy kick, consider adding diced jalapeños or cayenne pepper.
You can substitute Neufchâtel cheese for a healthier version of this dish.
This casserole can be refrigerated and reheated for leftovers.
