- 1 orange bell pepper (diced)
- 1 shallot (thinly sliced)
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 2 cloves garlic (minced)
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
Instructions
- In a large mixing bowl, combine the white beans, tuna, cherry tomatoes, diced cucumber, diced bell pepper, sliced shallot, chopped parsley, and dill.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and ground pepper until well mixed.
