Description

This Leprechaun Pistachio Fudge is an easy, no-bake treat packed with the delightful flavors of white chocolate, Irish cream, and crunchy pistachios. Perfect for gatherings or a sweet snack!


Ingredients

  • 3 ½ cups white chocolate chips (2224 ounces)
  • 14 ounces sweetened condensed milk
  • ¼ cup irish cream
  • 1 cup shelled pistachios roughly chopped

Instructions

  • Line an 8-inch × 8-inch baking dish with parchment paper, ensuring the liner hangs over the sides for easy removal later.
  • In a microwave-safe bowl, heat the condensed milk for 1 minute.
  • Place white chocolate chips in a large glass bowl and pour the warm condensed milk over them. Let it sit for 1-2 minutes before stirring until fully melted. If needed, microwave for an additional 15 seconds and stir again.
  • Mix the Irish cream into the melted white chocolate until completely combined. This may take a few minutes. Then, add 3/4 of the chopped pistachios and stir to combine.
  • Pour the fudge mixture into the prepared pan, sprinkling the reserved pistachios on top and gently pressing them in.
  • Refrigerate the fudge for 3 to 4 hours until it firms up. Once set, lift it out of the pan, remove the liner, and cut into 25 squares. Store in an airtight container in the fridge.

For a variation, try using different nuts like almonds or walnuts instead of pistachios.
