These Lasagna Roll Ups combine tender pasta, creamy cheese, and savory ground beef for a delightful meal. Perfect for a quick dinner or a family gathering.

- 1 teaspoon kosher salt
- ground beef
- 1 onion
- 2 garlic cloves
- marinara sauce
- oregano
- basil

- red pepper flakes
- ricotta cheese
- 1 egg
- 1 1/2 cups mozzarella cheese
- Parmesan cheese
- parsley
Instructions
- Preheat the oven to 375 degrees Fahrenheit and prepare a 9×13 inch baking dish with cooking spray.
- In a large pot, boil water and add 1 teaspoon of kosher salt along with the lasagna noodles. Cook according to package instructions, and set aside.
- In a skillet over medium heat, cook ground beef until it breaks apart. Add chopped onion and minced garlic, cooking until the onion softens, then drain excess grease.
- Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer for 10 minutes.
- Mix in a bowl ricotta cheese, egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley until well combined.
- Spread 1/2 cup of sauce at the bottom of the baking dish.
- Lay cooked noodles on a baking sheet, spreading 1/4 cup of cheese mixture on each. Top with 1 tablespoon of meat sauce, roll up, and place in the dish. Aim for 16 roll ups in total.
- Pour remaining meat sauce over the roll ups, topping with the last of the mozzarella cheese.
- Cover with foil and bake for 30-35 minutes. Remove foil and briefly broil to brown the cheese.
Notes
You may need to cook more noodles than required to allow for any that break during cooking.
