Instructions
- Prepare the pickled vegetables by whisking vinegar, honey, and salt in a bowl. Stir in the cucumber and carrots, ensuring they are well-coated and let them sit while you prepare the rest.
- Cook the rice according to the package instructions.
- Heat olive oil over medium heat, then add onion whites, garlic, and ginger. Cook for 30–60 seconds, stirring frequently until fragrant, avoiding browning to keep the flavors intact.
- Add ground beef to the skillet, sprinkling with salt, and cook while breaking it up until browned and cooked through. Drain any excess grease, maintaining about 1 tablespoon in the pan.
- In a small bowl, mix soy sauce, maple syrup, rice vinegar, sesame oil, gochujang (if desired), and cornstarch. Pour this mixture into the skillet with the beef and simmer for 2–3 minutes until the sauce thickens and coats the meat.
- Assemble the bowls by dividing the rice, topping with the beef and pickled vegetables, finishing with sesame seeds and green onions if you like.
Notes
Feel free to add other vegetables for pickling based on your preference.
The gochujang adds heat, adjust according to taste.
For a vegetarian version, substitute ground beef with lentils or tofu.
