Description

This Guinness Beef Stew offers a heartwarming combination of tender beef, vibrant vegetables, and rich flavors, perfect for a cozy dinner with loved ones.


Ingredients

Scale
  • 2 tbsp olive oil
  • 2.5 lb / 1.25 kg beef chuck
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped
  • 6 oz / 180g bacon, diced
  • 3 tbsp flour
  • 440ml / 14.9 oz guinness beer
  • 4 tbsp tomato paste
  • 3 cups chicken stock or beef broth
  • 3 carrots, peeled and cut
  • 2 large celery stalks, cut
  • 2 bay leaves
  • 3 sprigs thyme

Instructions

  • Cut the beef into 5cm chunks and pat dry. Season with salt and pepper.
  • Heat oil in a heavy pot over high heat. Brown the beef in batches, then set aside on a plate.
  • Reduce heat to medium. Add more oil if the pot is dry.
  • Sauté garlic and onion for about 3 minutes until softened. Then add in the bacon and cook until browned.
  • Stir in carrot and celery, cooking until softened.
  • Sprinkle flour into the pot, stirring for 1 minute to cook it off.
  • Pour in the Guinness, chicken stock, and tomato paste. Mix well, ensuring the flour dissolves. Add bay leaves and thyme.
  • Return the beef to the pot, including any juices. The liquid should just cover the beef.
  • Cover and reduce the heat to a gentle simmer. Cook for 2 hours until the beef is tender. Uncover and simmer for an additional 30-45 minutes until the beef falls apart and the sauce has thickened.
  • Skim off any fat from the surface, adjust seasoning, and discard bay leaves and thyme before serving.

Notes

For a gluten-free option, use gluten-free flour and ensure the beer is also gluten-free.
Serve with creamy mashed potatoes for a complete meal.
Store leftovers in the refrigerator for up to 3 days.
