- 2 pounds carrots (about 12–16 medium carrots, about 1-inch in diameter)
- 1 1/2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- 1 teaspoon chipotle paste
- 1/2 teaspoon chili powder
- salt, to taste
- for topping – fresh cilantro
Instructions
- Preheat the grill to medium-high heat.
- Wash and peel the carrots thoroughly.
- In a small bowl, combine melted coconut oil, cinnamon, chipotle paste, chili powder, and salt. Mix well.
- Rub the oil and spice mixture evenly over the carrots using your hands for better coverage.
- Place the seasoned carrots on the grill over indirect heat and grill for 20-25 minutes. Flip and rotate the carrots every 7-8 minutes for even cooking.
- Check for doneness; they should be slightly soft on the outside but firm on the inside when ready.
- Transfer the grilled carrots to a serving platter and top with fresh cilantro before serving.
Notes
Adjust the amount of chipotle paste for desired spice level.
For extra flavor, marinate the carrots in the spice mixture for an hour before grilling.
