- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup raisins
Instructions
- In a medium bowl, combine flour, cinnamon, baking soda, and salt. Stir in old-fashioned oats and set aside.
- In a large bowl, cream together softened butter, brown sugar, and sugar until combined. Mix in egg and vanilla, scraping the sides as needed.
- Gradually incorporate the dry mixture until just combined, then fold in raisins.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F. Prepare a baking sheet with parchment paper.
- Scoop 1 1/2 tablespoons of cookie dough onto the baking sheet, spacing them to allow for spreading.
- Bake for 10-12 minutes until golden.
- Let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack.
Notes
For chewier cookies, avoid overmixing the dough after adding the dry ingredients.
Chilling the dough helps the cookies keep their shape while baking.
