Treat yourself to this Gorgonzola pasta featuring creamy sauce and toasted walnuts. It’s quick to prepare and perfect for a satisfying dinner at home.


Ingredients

  • pasta
  • olive oil
  • walnuts
  • salt
  • cream
  • gorgonzola cheese
  • black pepper
  • parmesan cheese
  • fresh parsley

Instructions

  1. Cook pasta according to package directions until al dente, reserving ½ cup of the cooking water.
  2. Heat ½ teaspoon of olive oil in a large skillet over medium heat, add chopped walnuts, and a sprinkle of salt, then toast for about 4 minutes. Remove and set aside.
  3. In the same skillet, add cream, diced gorgonzola cheese, and black pepper. Simmer gently, stirring until the cheese melts and the sauce is smooth (3-4 mins). Turn off heat.
  4. Drain the pasta and combine it with the sauce in the skillet, adding reserved pasta water if needed for a creamy texture. Toss in half of the toasted walnuts.
  5. Serve warm with a drizzle of olive oil, the remaining walnuts, fresh parsley, and grate parmesan cheese on top.

Notes

Feel free to adjust the amount of gorgonzola based on your taste preferences.
The cream sauce can be thickened with additional pasta water if necessary. Keep tasting and adjusting to get the desired consistency.
