Description

Ingredients

  • 2 ⅔ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 ¼ cups granulated sugar
  • ¼ cup light brown sugar, firmly packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar for rolling the cookie dough balls

Instructions

  1. Whisk together the all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set this mixture aside.
  2. In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar together on medium speed for 3 to 4 minutes until light and fluffy, scraping the bowl's sides as needed.
  3. Reduce the speed to low, add the egg and egg yolk, and mix until fully combined. Add the vanilla and almond extracts, mixing until incorporated.
  4. With the mixer still on low, gradually add in the dry ingredients, half a cup at a time, until no white flour streaks remain. Finally, mix in the jimmies sprinkles until evenly combined.
  5. Line a baking sheet with parchment paper or a silicone mat. Scoop the cookie dough using a #40 scoop and place the dough balls on the prepared sheet. Chill the cookie sheet in the refrigerator for 2 hours or overnight.

Notes

For lighter cookies, use clear vanilla extract.
Allow cookies to cool completely before storing in an airtight container to maintain freshness.
