- 2 ⅔ cups all-purpose flour
- 1 tablespoon cornstarch
- 1 ½ teaspoons baking powder
- 1 teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 cup unsalted butter, room temperature
- 1 ¼ cups granulated sugar
- ¼ cup light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 ½ teaspoons vanilla extract
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar for rolling the cookie dough balls
Instructions
- Whisk together the all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set this mixture aside.
- In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar together on medium speed for 3 to 4 minutes until light and fluffy, scraping the bowl's sides as needed.
- Reduce the speed to low, add the egg and egg yolk, and mix until fully combined. Add the vanilla and almond extracts, mixing until incorporated.
- With the mixer still on low, gradually add in the dry ingredients, half a cup at a time, until no white flour streaks remain. Finally, mix in the jimmies sprinkles until evenly combined.
- Line a baking sheet with parchment paper or a silicone mat. Scoop the cookie dough using a #40 scoop and place the dough balls on the prepared sheet. Chill the cookie sheet in the refrigerator for 2 hours or overnight.
Notes
For lighter cookies, use clear vanilla extract.
