This Fresh Carrot Ribbon Salad is a delightful mix of vibrant carrot ribbons, crunchy pistachios, and fragrant herbs, all tossed in a zesty dressing. It’s perfect for a quick, healthy meal or as a refreshing side dish!

- 6 large carrots, (about 1 pound)
- 1/2 cup finely chopped pistachios
- 2 tablespoons chopped dill
- 2 tablespoons chopped parsley
- 1 green onion, (thinly sliced)
- Extra herbs and chopped pistachios, (for garnish)
- 1/3 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar, (or champagne vinegar)
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1 small clove garlic, (grated)
- Kosher salt and black pepper, (to taste)
Instructions
- Wash and peel the carrots. SHave each carrot lengthwise into thin ribbons using a vegetable peeler. Place the ribbons in a large bowl.
- In a small bowl, whisk together the olive oil, fresh lemon juice, apple cider vinegar, honey, Dijon mustard, and grated garlic. Season with kosher salt and black pepper to taste and whisk until smooth.
- Pour the dressing over the carrot ribbons and gently toss to coat.
- Add chopped pistachios, dill, parsley, and green onion, and toss again to mix evenly.
- Transfer the salad to a serving platter, garnish with extra herbs and chopped pistachios, and serve, or chill for 15–30 minutes to allow the flavors to meld.
Notes
Feel free to use other nuts such as walnuts or almonds for variation.
This salad can be prepared a few hours in advance and kept in the refrigerator for freshness.
