  • 1 tablespoon unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 2 large sweet onions, thinly sliced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (½ stick / 57 g) unsalted butter
  • 3 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ teaspoon crushed red pepper
  • 2 cups (476 g) heavy cream
  • 1 cup (100 g) parmesan cheese, grated
  • 9 lasagna noodles, cooked al dente according to package instructions
  • 1 ½ cups (369 g) ricotta cheese
  • 2 cups (280 g) rotisserie chicken, chopped
  • 2 cups (226 g) gruyere cheese, shredded, divided
  • ½ cup (50 g) parmesan cheese, grated
  • 1 ½ cups (45 g) spinach, chopped, divided
  • parsley, chopped for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Spray a 9×13-inch baking dish with nonstick spray and set it aside.
  • In a large skillet, melt 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.
  • Add the sliced sweet onions, kosher salt, and black pepper, cooking until the onions are caramelized, about 20 to 25 minutes.
  • Reduce the heat, stir in ¼ cup butter, minced garlic, and seasonings (kosher salt, pepper, crushed red pepper).
  • Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted, then remove from the heat.
  • In a mixing bowl, combine ricotta cheese, chopped rotisserie chicken, half of the Gruyere cheese, and half of the spinach. Mix well.
  • Spread a third of the cream mixture into the baking dish. Lay a lasagna noodle flat, spoon some chicken mixture on top, and roll it up. Place seam-side down in the baking dish.
  • Repeat until all noodles are filled and rolled, then pour the remaining cream mixture on top.
  • Sprinkle the rest of the Gruyere cheese and Parmesan cheese over the top. Add remaining spinach evenly.
  • Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20 to 30 minutes until bubbly and golden.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, sprinkle fresh herbs like thyme or rosemary on top before baking.
You can use any shredded cheese for added variety, such as mozzarella or cheddar.
If you prefer a lighter version, substitute heavy cream with half-and-half.
