Description

Ingredients

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add the chopped onions and cook, stirring occasionally for 3-4 minutes until they become translucent.
  • Transfer the onions to a large mixing bowl and let cool for 2-3 minutes.
  • Mix in the blue cheese, panko breadcrumbs, kosher salt, and black pepper.
  • Gently mash the mixture together with a fork.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter and increase the heat to high.
  • Season both sides of the filet mignon steaks with kosher salt and black pepper.
  • Sear each steak on both sides for about 3 minutes until browned.
  • Top the seared steaks with the blue cheese mixture, then place the skillet in the oven for 4 minutes for rare, or 5-6 minutes for medium, adjusting as necessary for well done.
  • Let the steaks rest for 10 minutes, covered with a sheet of foil, before serving.

Notes

For a more intense flavor, use aged blue cheese.
You can substitute panko breadcrumbs with regular breadcrumbs if preferred.
