- 4 ears of corn, husked
- ½ cup mayonnaise
- 1 tablespoon lime juice (about ½ medium lime)

- ½ teaspoon cayenne, divided (or chili powder)
- 2 tablespoons unsalted butter, melted
- ½ cup crumbled cotija cheese
- ¼ cup chopped cilantro
Instructions
- Boil a large pot of water over high heat. Add the corn and cook for 5 minutes until tender and bright yellow. Transfer to a plate to cool.
- In a small bowl, combine the mayonnaise, lime juice, garlic, and ¼ teaspoon of cayenne.
- Apply melted butter to all sides of the corn, then coat generously with the mayonnaise mixture.
- Sprinkle cotija cheese, the remaining cayenne, and chopped cilantro over each ear of corn.
Notes
