This Elegant Graduation Cake with Fondant Cap Topper brings together a blend of delicious yellow and chocolate cakes, layered with buttercream frosting and topped with a charming fondant cap. - 2 Yellow sheet cake
- 2 Chocolate sheet cake
- 1 Cotton candy cake
- 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
- 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
- 1 batch Rice krispie treats (Can also use store-bought )
Instructions
- Bake 2 yellow sheet cakes and 2 chocolate sheet cakes, along with 1 cotton candy dome cake while allowing them to cool completely.
- Prepare the yellow buttercream frosting while the cakes are cooling.
- For the cap cake, place the dome cake on a cake board and frost smoothly in buttercream. Chill in the refrigerator for 20 minutes.
- Roll out black fondant and spread it over the chilled dome cake, smoothing it out and cutting excess around the base. Insert a bubble tea straw in the center.
- Create the cap top using cardboard, coloring the edges with a black edible marker. Apply a layer of icing and cover with black fondant, trimming excess with a knife.
- Cut out a small circle from fondant, brush corn syrup on the cardboard, and attach a ribbon. Place this cap top on the dome cake using melted chocolate or royal icing and steam to remove residue.
- For the edible diploma, roll rice krispie treats into a cylindrical shape and spread buttercream along its sides. Wrap in white fondant, trimming excess.
- Cut out two white fondant circles and attach them on the diploma with buttercream icing. Wrap a red ribbon around it.
- On a large cake board, place the 2 chocolate sheet cakes side by side, spreading icing on top, followed by the yellow sheet cakes. Smoothly spread icing on all sides of the cake.
- Using yellow icing and a piping bag with a large star tip, pipe roses around the sides and top of the cake.
- Decide the placement for the diploma and cap on the cake, reinforcing these spots with dowels or bubble tea straws before adding the decorative elements.
- Cut letters for 'Congratulations Class of 2024' using cookie cutters and adhere them to the cake board with buttercream icing.

Ensure all cakes are completely cool before frosting to prevent melting.
For a more vibrant color, consider using gel food coloring in your buttercream frosting.
