- 2 tbsp arrowroot or tapioca
- 1 tsp salt
- 1/2 tsp pepper
- 1 large egg
- 1 lb chicken pieces
- 2 tbsp oil
- 1 medium onion, chopped
- 1 cup bell peppers, sliced
- 2 cloves garlic, minced
- 1 cup pineapple chunks
- 2 tbsp sesame seeds
- 2 green onions, sliced
Instructions
- In a medium bowl, whisk together all sauce ingredients and set aside.
- In a shallow bowl, season the arrowroot or tapioca with salt and pepper for coating the chicken.
- Whisk an egg in another shallow bowl. Season the chicken pieces with salt and pepper, lightly coat them in the egg, and toss them in the arrowroot, shaking off the excess before placing on a large plate.
- Heat about 1/2 cup of oil in a large deep non-stick skillet over medium-high heat. Once hot, cook the chicken in batches for 2-3 minutes, turning occasionally until golden. Remove cooked chicken to a paper-towel-lined plate and repeat with remaining pieces, adjusting the heat as necessary.
- Drain all but 1-2 tablespoons of oil from the skillet and lower the heat to medium. If there are a lot of browned bits in the skillet, clean it fully and add a tablespoon of olive oil to cook the veggies. Add the onion and bell peppers, cooking for about 2 minutes until crisp-tender.
- Add garlic and pineapple to the skillet and cook for approximately 1 minute.
- Pour the prepared sauce into the skillet, stirring to coat everything well. Cook until bubbling and slightly thickened, about 2-3 minutes. Add the fried chicken pieces and gently toss to coat with the sauce.
- Serve hot with garnishing of sesame seeds and sliced green onions, and enjoy over sautéed cauliflower rice or stir-fried veggies.
Notes
For added crunch, try using fresh vegetables like snap peas or carrots.
Can substitute chicken with tofu for a vegetarian option.
Adjust the sweetness of the sauce to your preference by adding more pineapple or sugar.
