- 13.25 oz white cake mix box
- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix, melted butter, and eggs. Optional extracts can be added here. Stir until a thick dough forms.
- Fold in the rainbow sprinkles gently. Avoid over-mixing; the dough will be sticky.
- Let the dough rest uncovered for about 5 minutes to thicken. Check if it's ready by pressing a finger into it, it should not stick.
- Use a medium cookie scoop (size #40 or 1.5 Tbsp) to portion the dough.
- Roll each dough ball in extra sprinkles, pressing gently for adherence.
- Space the coated dough balls about 3 inches apart on the baking sheet and bake for 10-12 minutes, until edges are set but center is slightly underdone.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack for further cooling.
Notes
These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
