Description

Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract
  • gel food colouring

Instructions

  1. Cream the softened butter and granulated sugar on medium speed until light and fluffy.
  2. Add the egg and vanilla, mixing until well combined.
  3. Mix in the baking powder and salt at low speed, then gradually add the flour until combined.
  4. Shape the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes or until firm.
  5. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  6. Let the dough sit for 5-10 minutes at room temperature, then roll it out to 1/4-inch thickness.
  7. Cut the dough into egg shapes using a cookie cutter and transfer them to the baking sheet, spacing them apart.
  8. Bake for 8-10 minutes or until the edges turn golden brown, then cool the cookies completely on a wire rack.

Notes

For best results, let the dough chill longer if possible, up to overnight.
Use gel food coloring to achieve vibrant royal icing colors for decorating.
