Description

Crockpot Chicken Fajitas offer an irresistible flavor packed with tender chicken, vibrant peppers, and a hint of lime, making it a quick and delightful meal for busy weeknights.


Ingredients

  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers (green, yellow, and red, sliced into strips)
  • 1 large yellow onion (sliced)
  • 4 cloves garlic (minced)
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice (1 lime)
  • Soft shell fajita tortillas (warmed, optional for serving)
  • Fresh chopped cilantro (optional for serving)
  • Sour cream (optional for serving)

Instructions

  1. Place the diced tomatoes, bell peppers, onion, garlic, and chicken in a 6-quart or larger slow cooker.
  2. Sprinkle the fajita seasoning and black pepper over the chicken, then pour lime juice on top.
  3. Cover the slow cooker and cook on low for 6–8 hours or high for about 4 hours until the chicken is cooked through and tender.
  4. Remove the chicken, shred it with two forks, and return it to the slow cooker; mix well with the vegetables and juices.
  5. Serve in warmed tortillas and garnish with cilantro and sour cream if desired.

Notes

For a spicier version, use a hot salsa or add jalapeños.
Feel free to customize with your favorite veggies like mushrooms or zucchini.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
