Description

Crockpot Bacon Cheeseburger Tortellini blends savory ground beef, crispy bacon, and creamy cheddar cheese into a delightful meal, perfect for busy nights. This dish is not only full of flavor but also easy to prepare, making it a great choice for a quick and hearty dinner.

Ingredients

Scale
  • 1 pound ground beef browned and drained
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ cup diced onion
  • 12 slices bacon cooked and crumbled, divided
  • 1 14.5-ounce can diced tomatoes, drained
  • 1 1/2 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon yellow mustard
  • 20 ounces refrigerated cheese tortellini
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a slow cooker, combine the browned ground beef, diced onion, salt, pepper, garlic powder, paprika, half of the crumbled bacon, and drained diced tomatoes.
  2. Add the beef broth, tomato sauce, and mustard to the slow cooker and mix until everything is well blended.
  3. Cover and cook on low heat for about 3 hours to let the flavors meld together.
  4. Stir in the cheese tortellini, ensuring they are mostly covered by the sauce.
  5. Continue to cook for an additional 30–40 minutes, until the tortellini is tender.
  6. Mix in the shredded cheddar cheese and stir until it melts and creates a creamy sauce.
  7. Garnish with the remaining crumbled bacon and let the dish rest for about 5 minutes before serving to allow the sauce to thicken.

Notes

Feel free to adjust the spices to your taste for more heat or flavor.
You can use frozen cheese tortellini if that’s what you have on hand; just adjust the cooking time accordingly.
