- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper. Wash and vertically slice the cabbage in half. Cut 'steaks' from one half about 1 inch thick, ensuring they hold together through the stem.
- In a bowl, mix olive oil, 1/3 cup grated Parmesan, garlic, salt, pepper, and smoked paprika. Brush this mixture on both sides of the cabbage steaks.
- Use the remaining Parmesan to create piles on the baking sheet, one for each steak (about 1/3 cup each). Then, position each cabbage steak on top of its cheese pile.
- Roast in the oven for 20-25 minutes, until the cheese becomes brown and crispy.
- Before serving, drizzle with balsamic vinegar and sprinkle with fresh parsley. Serve immediately.
Notes
The cheese can be adjusted to your taste for a richer or lighter flavor.
Ensure the cabbage steaks are thick enough to hold during roasting.
