These Cottage Cheese Brownies are a delicious twist on a classic treat. They combine the richness of cottage cheese with cacao powder for a fudgy texture that’s loved by everyone. - 2/3 cup cottage cheese blended
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup almond flour
- 1/3 cup cacao powder
- 1/4 tsp baking soda
- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking dish with parchment paper or grease it well.
- Blend the cottage cheese in a blender or food processor until it reaches a smooth, thick yogurt-like consistency. Set it aside.
- In a large mixing bowl, whisk the eggs, vanilla extract, coconut sugar, and maple syrup together. Mix in the blended cottage cheese until everything is fully combined.
- Stir in the almond flour, cacao powder, and baking soda until you achieve a smooth brownie batter.
- Gently fold in the chocolate chips, reserving some to sprinkle on top for that desired chocolate puddle effect.
- Transfer the batter to the prepared baking dish, spreading it evenly, and top with the remaining chocolate chips.
- Bake for about 24–26 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs remaining for that fudgy texture.
- Allow the brownies to cool in the pan for at least 15–20 minutes before slicing to let them set.
Notes
For an extra chocolatey flavor, use dark chocolate chips as the topping.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
These brownies can also be enjoyed warm or cold, depending on your preference.
