Description

These Cottage Cheese Brownies are rich, moist, and packed with protein. With simple ingredients like cottage cheese and almond flour, they make a great healthy dessert option without sacrificing taste.


Ingredients

  • 3/4 cup cottage cheese
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup sugar
  • 2/3 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • 1/3 cup chocolate chips

Instructions

  • Preheat your oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray.
  • Blend the cottage cheese, eggs, vanilla extract, maple syrup, and sugar in a blender for 60-90 seconds until smooth.
  • In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
  • Fold the wet mixture into the dry ingredients using a spatula until just combined.
  • Gently mix in the chocolate chips, then pour the batter into the prepared baking dish and spread evenly.
  • Bake for 18-22 minutes or until the top is set and a toothpick comes out with a few moist crumbs. Allow to cool for 5 minutes before cutting into squares.

Notes

Using a blender contributes to a finer texture than a food processor.
Do not overmix the batter to keep the brownies tender.
Reserve a few chocolate chips to decorate the top for presentation.
