- 3/4 cup cottage cheese
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1/4 cup sugar
- 2/3 cup almond flour
- 1/4 cup cocoa powder
- 1/4 tsp baking soda
- 1 pinch of salt
- 1/3 cup chocolate chips
Instructions
- Preheat your oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray.
- Blend the cottage cheese, eggs, vanilla extract, maple syrup, and sugar in a blender for 60-90 seconds until smooth.
- In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
- Fold the wet mixture into the dry ingredients using a spatula until just combined.
- Gently mix in the chocolate chips, then pour the batter into the prepared baking dish and spread evenly.
- Bake for 18-22 minutes or until the top is set and a toothpick comes out with a few moist crumbs. Allow to cool for 5 minutes before cutting into squares.
Notes
Using a blender contributes to a finer texture than a food processor.
Do not overmix the batter to keep the brownies tender.
Reserve a few chocolate chips to decorate the top for presentation.
