Description

This Dublin Coddle is a must-try for comfort food lovers! With savory sausage, tender potatoes, and delightful seasonings, it’s perfect for quick dinners or cozy gatherings.


Ingredients

  • 6 ounces bacon, cut into 1 inch pieces
  • 1 pound pork sausage
  • 2 large potatoes, peeled and cut into bite sized pieces
  • 2 large onions, sliced
  • 3 cups beef broth (or chicken broth)
  • salt and pepper to taste
  • 2 tablespoons parsley, chopped

Instructions

  • In a large saucepan, cook the bacon and then set it aside, keeping 2 tablespoons of bacon grease in the pan.
  • Brown the sausage on all sides in the same pan and then remove it from the heat.
  • Sauté the onion in the pan until it becomes tender.
  • Layer the potatoes on top of the cooked onions, followed by the bacon, sausage, and broth. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for 2 hours.
  • Season with salt and pepper, stir in the parsley, and serve.

Notes

For added richness, consider using a combination of beef and chicken broth.
Feel free to add other vegetables like carrots for extra flavor and nutrition.
