- 6 ounces bacon, cut into 1 inch pieces
- 1 pound pork sausage
- 2 large potatoes, peeled and cut into bite sized pieces
- 2 large onions, sliced
- 3 cups beef broth (or chicken broth)
- salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
- In a large saucepan, cook the bacon and then set it aside, keeping 2 tablespoons of bacon grease in the pan.
- Brown the sausage on all sides in the same pan and then remove it from the heat.
- Sauté the onion in the pan until it becomes tender.
- Layer the potatoes on top of the cooked onions, followed by the bacon, sausage, and broth. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for 2 hours.
- Season with salt and pepper, stir in the parsley, and serve.
Notes
