- 1¼ pounds ground chuck (80% lean ground beef)
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground mustard
- 1 teaspoon worcestershire sauce
- ½ tablespoon vegetable oil, for cooking
- heaping ¾ teaspoon kosher salt
- 4 slices cheddar cheese
- 4 hamburger buns (lightly toasted, if desired)

Instructions
- In a large bowl, mix the ground beef with black pepper, garlic powder, onion powder, ground mustard, and Worcestershire sauce. Do not add salt yet. Form the mixture into 4 large meatballs (about 4½ oz each) and flatten them into discs about 1 inch thick. Refrigerate for at least 15 minutes or up to 24 hours covered.
- Heat a cast-iron or nonstick skillet over medium-high heat with the exhaust fan on. Remove the patties from the fridge and season them with salt. Coat the skillet evenly with vegetable oil.
- Place the burgers in the pan one by one, smashing them down flat with a spatula until they are about ¼-inch thick. Cook for about 2 minutes until browned, then flip and add cheese. Cook for an additional 2-3 minutes depending on your desired doneness. Serve on buns with preferred toppings.
Notes
For best flavor, refrigerate the formed patties before cooking for at least 15 minutes.
These burgers can be frozen uncooked for up to three months. Thaw overnight in the fridge before cooking.
Ensure the skillet is hot enough to create a nice crust on the burgers.
