These Circus Animal Cookie Rice Krispie Treats are a delightful twist on a classic treat. With crunchy rice krispies, rich white chocolate, and colorful circus animal cookies, they’re perfect for parties or a sweet snack at home. Easy to prepare and even easier to enjoy!
Ingredients
- circus animal cookies – 9 ounces
- mini marshmallows – 10 ounces
- rice krispies cereal – 6 cups
- unsalted butter – 4 tablespoons
- multi-colored nonpareils – 3 tablespoons
- colored sprinkles – 3 tablespoons
- white chocolate chips – 1/2 cup
- red food coloring – 1-2 drops
- heavy cream (optional) – 1/2 teaspoon
Instructions
- Grease a 9×13-inch baking dish with cooking spray.
- Pulse circus animal cookies in a food processor until they are a mix of crumbs and small pieces. Reserve 1/2 cup for topping.
- In a large pot, melt unsalted butter and mini marshmallows over low heat, stirring constantly until smooth.
- Remove from heat and fold in rice krispies cereal, cookie crumbles, and 2 tablespoons of each type of sprinkles.
- Gently press the mixture into the prepared baking pan using a greased silicone spatula.
- Top with the reserved cookie pieces for added texture.
- Melt white chocolate chips in two separate bowls in the microwave for 30 seconds at a time until smooth.
- Drizzle the first bowl of melted white chocolate over the treats using a sandwich bag with the corner cut off.
- Add red food coloring to the second bowl to create pink chocolate, then drizzle over the treats in the opposite direction.
- Finish by sprinkling the remaining colored sprinkles on top and let cool until set.
Notes
Ensure the butter is melted on low heat to prevent burning.
Feel free to use any preferred colored sprinkles or chocolate chips for decoration.
These treats can be stored in an airtight container for up to a week.
