Description
Chili Lime Roasted Cauliflower bursts with flavors from chipotle, lime, and garlic. It’s an easy and healthy option for a satisfying dinner or side dish.

- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder (more or less for spiciness!)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)
- 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)
Instructions
- Preheat the oven to 200°C/390°F.
- In a large bowl, add the cauliflower florets and drizzle olive oil over them. Add the minced garlic and mix well, ensuring the oil coats all pieces.
- Sprinkle chipotle powder, salt, and black pepper over the cauliflower. Toss to evenly coat all the florets.
- Spread the seasoned cauliflower on a baking tray in a single layer. Bake for 25 minutes, tossing once halfway through until the edges are caramelized and the cauliflower is tender.
- Remove the cauliflower from the oven and push the florets together. Drizzle with lime juice.
- Sprinkle with chopped coriander before serving hot.
Notes
Adjust the chipotle powder to suit your spice preference.
For added freshness, feel free to substitute coriander with parsley or chives.
Ensure even baking by spreading the florets in a single layer on the tray.
