- 8 chicken thighs
- 4 cloves garlic
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- 3 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/2 cup brown sugar
- 1 cup green olives (pitted or unpitted)
- 1 cup pitted prunes
- 1 tablespoon capers
- Salt (to taste)
- 1 cup white wine
- Chopped parsley (for garnish)
Instructions
- Chop the garlic cloves, and in a large bowl, combine garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add green olives, pitted prunes, capers, and a good pinch of salt to the bowl along with chicken thighs. Mix thoroughly to coat the chicken in the marinade.
- Cover the bowl with plastic wrap and refrigerate for a minimum of 3 hours, preferably overnight.
- Preheat the oven to 180°C (350°F), and arrange the chicken along with the marinade and other ingredients in a large baking pan.
- Pour white wine around the chicken without hitting it directly to promote crispy skin.
- Roast in the preheated oven for 50 minutes to 1 hour until the chicken is fully cooked and the skins are golden brown (internal temperature should reach 74°C / 165°F).
- Sprinkle chopped parsley before serving.
Notes
For best flavor, marinate the chicken overnight.
Feel free to use skin-on chicken for extra crispiness.
