Description

Chicken Marbella combines vibrant flavors of olives, prunes, and a delightful marinade. This easy, flavorful dish is perfect for a quick family dinner or special gatherings. Enjoy the juicy chicken coated in a savory sauce that will impress any guest!


Ingredients

  • 8 chicken thighs
  • 4 cloves garlic
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 3 bay leaves
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup brown sugar
  • 1 cup green olives (pitted or unpitted)
  • 1 cup pitted prunes
  • 1 tablespoon capers
  • Salt (to taste)
  • 1 cup white wine
  • Chopped parsley (for garnish)

Instructions

  1. Chop the garlic cloves, and in a large bowl, combine garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  2. Add green olives, pitted prunes, capers, and a good pinch of salt to the bowl along with chicken thighs. Mix thoroughly to coat the chicken in the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for a minimum of 3 hours, preferably overnight.
  4. Preheat the oven to 180°C (350°F), and arrange the chicken along with the marinade and other ingredients in a large baking pan.
  5. Pour white wine around the chicken without hitting it directly to promote crispy skin.
  6. Roast in the preheated oven for 50 minutes to 1 hour until the chicken is fully cooked and the skins are golden brown (internal temperature should reach 74°C / 165°F).
  7. Sprinkle chopped parsley before serving.

Notes

For best flavor, marinate the chicken overnight.
Feel free to use skin-on chicken for extra crispiness.
Serve with crusty bread to soak up the sauce.
