- 1 cup whole wheat flour, or sub all purpose
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 tbsp honey
- 3 tbsp plain yogurt
- 1 cup almond milk, or milk of choice
- 2 tbsp chia seeds
- 2 tbsp plain yogurt
- 1 tsp lemon zest
- 1/4 cup blueberries
Instructions
- In a bowl, whisk together eggs, honey, yogurt, and milk until well combined.
- Add flour, baking soda, and chia seeds to the mixture, whisking until smooth.
- Allow the batter to rest for about 10 minutes to let the chia seeds soak.
- Preheat a nonstick griddle or skillet over medium-low heat.
- Using a 1/4 cup measuring cup, pour pancake batter onto the hot surface.
- Cook until bubbles form on the surface (about 1-2 minutes), then flip and cook until golden brown.
- For the topping, mix yogurt with lemon zest in a bowl.
- Serve pancakes topped with the lemon yogurt and blueberries.
Notes
Feel free to substitute the whole wheat flour with all-purpose flour if preferred.
Adding your favorite fruits can make these pancakes even more delicious.
Adjust the sweetness by increasing or decreasing honey according to taste.
