- 1 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup carrots, shredded
Instructions
- Preheat the oven to 350 degrees and spray an 8 x 8 pan with non-stick spray.
- In a medium bowl, combine melted butter and brown sugar, mixing them together.
- Stir in the egg and vanilla until well mixed.
- Add flour, cinnamon, baking powder, and salt, stirring until completely combined.
- Fold in the shredded carrots gently.
- In another bowl, beat the softened cream cheese and sugar together until smooth.
- Add the egg yolk and vanilla to the cream cheese mixture and beat until creamy.
- Spread half of the carrot cake batter evenly into the prepared pan.
- Dollop half of the cheesecake mixture onto the carrot cake batter.
- Spread the remaining carrot cake batter on top, followed by the remaining cheesecake mixture.
- Using a knife, swirl the batters together to desired effect.
- Bake for 35-40 minutes, until the edges are golden and the center slightly jiggles.
- Allow to cool completely before cutting into bars.
