Description

This Beef Burrito is packed with flavorful lean ground beef, black beans, and melted cheese, all wrapped in a warm tortilla. Perfect for a quick and easy dinner that everyone will love!


Ingredients

  • 1 tablespoon canola oil
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion, diced
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups shredded cheese (Monterey Jack, sharp cheddar, or Mexican blend)
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat canola oil in a large skillet over medium-high heat until shimmering.
  2. Add ground beef and press it to a ½-inch thickness. Sizzle for 3-4 minutes to form a crust.
  3. Sprinkle beef with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Add diced onion and break up meat with spoon. Cook for an additional 4 minutes until browned.
  4. Mix in black beans and salsa. Cook until beans are warmed through and liquid is mostly absorbed, about 1 minute. Adjust seasoning as needed.
  5. Lay a tortilla on a flat surface, add about 3 tablespoons of cheese in the center, and top with ⅙ of the beef mixture. Add another 3 tablespoons of cheese on top.
  6. Fold in the sides of the tortilla, then roll tightly from one end to secure the filling. Repeat with remaining tortillas.
  7. Warm a nonstick skillet over medium heat and place a burrito seam side down. Cook for 1-2 minutes until golden brown, then flip to brown the other side. Allow to cool slightly and serve with desired toppings.

Notes

For added flavor, you can mix in some chopped jalapeños or bell peppers with the beef.
Feel free to customize toppings like sour cream or avocado to your taste.
These burritos are easy to freeze; just wrap tightly and store for up to 3 months.
