- 1 cup freshly grated parmesan cheese (divided)
- 2 large eggs

Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
- In a bowl, combine thawed hash browns, half of the Parmesan cheese, eggs, salt, and pepper.
- Scoop about 2 tablespoons of the mixture into each muffin slot and press firmly to form cups.
- Bake for 20-25 minutes until golden brown and crispy.
- Remove from the oven, sprinkle with the remaining Parmesan cheese, and bake for an additional 5 minutes until bubbly.
- Top with chopped green onions before serving warm.
Notes
Make sure to press the hash brown mixture firmly into the muffin tin for better shape.
